COhatch Springfield

CO Hatch Springfield is a trendy spot w 5 restaurants and 2 bars. It's a place to eat, hang out, work, etc. Two of the five restaurants have GF options. There's a waffle place that offers GF waffles, but they are cooked on the same waffle iron as the non-GF waffles, so I chose not to eat there. Instead I ate at The Painted Pepper. All their tacos (except fish tacos) and their vegan bowls are GF. I had the pork tacos and they were delicious. They said that although their tacos are cooked on the same surface as their non GF fare, they would be extra careful to clean the grill before cooking my order to avoid cross contamination. The food was great and it didn't make me sick so they must have done a good job cleaning the grill. There aren't a lot of GF options in Springfield, so I was very happy to have a good experience at The Painted Pepper.
