Because most of the prepared foods have soy sauce in them, you have to let the staff know you have an allergy and then ask them to make you a bowl with just the ingredients you tell them to. I got the Tako "Hawaiian style" over lettuce with cucumbers and seaweed salad on the side. I think Hawaiian style or wasabi mayo are the only sauces you can get. Make sure they check for you because the staff wasn't super knowledgeable about gluten, but they did check w the chef to reassure us of what was safe to eat. My friend and I both have celiac and she eats here a lot without any problems.
