We went to Dimora on a busy Saturday night and the staff was so awesome. I called ahead because I eat gluten and dairy free so am always challenged with a menu. I was told they can prepare gluten free pasta with any sauce or protein requested. All the appetizers were not an option and the salad could be prepared without any cheese plus they did have two house soups that evening. Plenty of fresh options that were suggested however I was not super hungry. I generally stay away from pasta so instead opted for the organic roasted chicken which is usually served with mashed potatoes and a vegetable. The potatoes have butter and the vegetables are prepared ahead. What made this a fantastic experience was the waiter said we can make you any vegetable any way you want it prepared to avoid any cross contamination. I had an absolutely delicious chicken with fresh green beans sautéed in olive oil with salt and pepper. Chef’s kiss!!! No issues at all and the left overs were just as delicious the next day. They have some amazing classic dishes and everyone in our party raved about their pasta and protein based dishes.
