Omg, this is the best gluten free donut I have ever had! I have no idea how they made it rise and have layers like gluten, but they did it. I let them know I have celiac disease and she washed her hands and changed gloves before grabbing mine for me. As with anywhere else baking with flour, I assumed there was a risk of cross contamination from it being in the air, so I took my gluten cutter before I ate it and had no symtpoms.
