Durum is the bomb.com! After 10 years of being Celiac I can finally enjoy authentic handmade pasta. Have purchased to bring home many times and never have any symptoms. They do completely separate prep (GF first in the morning before wheat) and then the kitchen is thoroughly sanitized at the end of the day. Can’t recommend enough!
