Aside from making poke bowls to order, there is no issue with requesting items containing gluten be omitted. In addition to signature bowls, ERPS has a "build your own" option. They also offer a "flourless" chocolate cake. You need to call directly or order in person to confirm none of the components of your order contain gluten. I've found the staff to be wonderfully accommodating here.
