I went to Eataly today for lunch. They do have some gluten free pasta and pizza substitions that you have to ask the waiter for.
I was told the pasta is a quinoa rice combination.
The pizza is has more chance of cross contamination since they put it in the pizza oven with other non gluten free pizza.
So far I’m ok, and no issues from eating the pizza. I got the mushroom and truffle one. Dough did taste good and the pizza itself was on the softer side.
I spoke with the chef about the pizza dough and it’s an Italian flour that uses wheat flour that undergoes a process to get gluten out. The brand is called Caputo. It’s easily searchable online and says gluten free. The chef told me that in the past they where using a different flour that caused more issues for people.
As far as quality vs price the food was a little more underwhelming than I was hoping for. I’m Italian and was hoping for a taste of home. Didn’t quite happen but was an experience.
