The flour and corn tortillas are warmed on the same surface, and the pastor pork is also warmed on that same surface, so you need to be careful about cross contact. My waitress (who was also celiac) told me there is a new chef who gets frustrated with food allergies (and apparently won’t take precautions like heating up a corn tortilla in a clean pan). So proceed with caution!

Items with gluten are noted on menu. I’m not sure about risk of cross contamination though. We had tacos and they were excellent.
Our waiter understood celiac disease. Because the tacos are warmed on the same surface as flour tortillas, my options were limited. But the guacamole was amazing, and my salad was delicious. So nice to be able to eat chips at a restaurant!
Yes
Knowledgeable server, and anything containing gluten indicated it on the menu. The tortilla chips are purchased, not made onsite, and are also gluten free. Decent selection of gluten free options.
