3 salads and a GF bagel were the only items marked safe in their menu.
5/6/17 Decent selection of gluten free items available including g-free bread and rolls. The staff is pretty knowledge of gluten containing menu items. They don't have a dedicated fryer, however, the chef has made a separate batch of GFree fries (depending on what time you visit)
Updated 8/1/17: Gfree fries are no longer an option as they will not separate oil or dedicate fryer. Very disappointing :( Reduced my rating from a 4 to a 3. We will be less likely to frequent here now. Our waitress was not knowledgeable of gluten free this time either. Made me nervous.

Very limited GF options. Ended up with the Cobb Salad with Ken's Creamy Italian dressing. None of their in house dressings are GF. None of their steaks are noted as GF. I never had issues here, but they've changed the menu and you need to look for the GF next to the menu item.
Depending on your level of sensitivity, you may choose to steer clear of Emerald. Upon my asking, I was informed that the gluten free options were grilled on the same fryers as regular items. When I asked about what dressings I could have on the gluten free Cobb salad, the server got frustrated (as did I) and told me she didn't know and wouldn't bother to ask the chef in the middle of a packed restaurant. She then went on to say that there aren't labels on their dressings, that they fill them from vats, and that she couldn't check the ingredients even if she wanted to. I didn't end up ordering anything with the rest of my table and eventually she came back and said that the chef would make me a Greek dressing. I ate it, it tasted fine, and the next day I got moderately sick, which I probably deserved for losing my cool with her. Anyway, they seem to treat gluten free as more of a fad diet label than a safety guideline.

Surprisingly decent gluten free menu given its in Verona NY at a casino no less! Recommended at all hours of the day! Check out peach blossom too.
