Ate here four times during a family trip, and servers were very attentive to gluten free needs. Never got sick! They have a dedicated gluten free fryer and offer gluten free bread and linguine (maybe other pastas), as well as pancakes and french toast. When eating at the breakfast buffet, the kitchen made me eggs and GF toast, so they were sure there would be no cross contact.
