Literally without prompting the waitress told me basically everything is gluten free. They serve gluten crackers with the ceviche (can do chips instead) and the desserts had gluten. Everything else was safe. The berria is to die for. Cool vibe. They don't take resos but the line moved fast. A bit pricey but this place does have Michelin recognition so that is to be expected.
