Went three times in the past 6 months. I ordered an assortment of sushi the first time and the Haemul Dolsot the next two times. The servers sounded knowledgeable about GF menu options and informed/asked the Chef when they could not answer my questions. They seemed quite aware of the seriousness of Celiac. I was assured multiple times it would be made GF and extra precautions would be taken to avoid cross-contact. Indeed, the sushi was fresh and very tasty. And the Dolsot was delicious. However, I didn't feel well for a while after eating the Dolsot. Sadly, it did not initially occur to me it might be the food. The last time I went, the server told me I couldn't order the Dolsot because the noodles (the same noodles I had before) were made with wheat. Very disappointing to realize they served me gluten after I explained how desperately I needed to avoid it.
