Our server was quite knowledgeable about the ingredients of the various dishes. And, when, she wasn't sure, she asked the chefs. I usually stick to the pho at Vietnamese restaurants, and I double-checked that they didn't use soy sauce in the pho. They didn't, of course. My wife also ordered chicken spring rolls on rice paper. We all thought that should be fine for me since rice paper is typically gluten free. However, after the server left to put in our order, she proactively checked with the chef who told her that the chicken was prepared with some soy sauce. So, she cancelled that part of our order. All in all, we had a great meal of pho, and I didn't get sick.
