Delicious, artisanal bakery that is not only dedicated gluten free and mostly vegan--with a sumptuous selection: hearty bread, amazing quiches, cakes (lemon-lavender, vanilla, raspberry, carrot, and more); blondies, brownies, and assorted tortes and cookies. EVEN GLUTEN FREE WHOOPIE PIES!! Kelsey, the baker, uses bean flours in innovative and low-glycemic ways--you can find her at local markets/the famous Brattleboro Farmer's Market--but the best is to order and pickup at the bakery--which is also a homestead farm, where this talented chef grows some of her own ingredients. The Hidden Bean is superior to any of the much more expensive bakeries you'll find in NYC or Boston--fresher flavors, better ingredients, and a personable, talented chef/creator.

The treats at Hidden Bean ARE a REAL treat, and honestly the highlight of visiting the Brattleboro Farmer's Market for me--seriously, I get really excited to see what Kelsey has cooked up for the day. (And she's also *super* nice and great to chat with!)
For those of you with friends who have no gluten sensitivities and think GF foods feel like they're "missing something," I can say that the goodies from Hidden Bean absolutely do not feel or taste that way! Everything from there is good but my goodness, the (dairy-free!! 😲🤔🤯) quiche...I couldn't get over it the first time I had one. I yammered about the crust on that quiche for a solid hour, I think.
So give The Hidden Bean a try--even your gluten-loving friends will enjoy it!
(PS, I'm personally convinced the answer to how she achieves such an amazing crust without any butter has got to be...magic and sorcery. 😄🧙♀🥧)

Having had the chance to visit Brattleboro often over the years, I always look forward to finding this bakeshop at the Farmer's market and getting a treat or a loaf of bread. This is top-notch gluten-free baking, and I don't feel like I'm missing anything here -- she managed to use healthy ingredients in delicious combination, and everything -- texture, flavor, the way I feel after eating -- is of the quality you'd expect from an exceptional country kitchen.
