I work here and have a gluten allergy. We have a celiacs button for any food items you order to alert the kitchen, and the kitchen staff are very knowledgeable about cross contamination. They thicken the soup and chili with gf corn masa so that is always an option. The salads and some taco options are also available. They do use a beer reduction in the bbq sauce so avoid that. The fryers have cross contamination so side salads will be your best friend. They make sure to put any gf buns on the grill instead of in the regular toaster.
