I cannoy say enough good about this bakery. I'm not sure what flour blend they use, but it wasn't dense and heavy like most gf bakeries in the US. My regular croissant was flaky. My ham and cheese croissant was so good (they warmed it for me.) My doughnut was light and airy and so soft. I didn't eat my cinnamon roll until the next day, but it was still moist. And again, not heavy. My non celiac family members had cheesecake and brownies and raved about them.
