The menu and website are not very helpful. I found a nutrition chart that indicated which menu items contain gluten (almost all of them). I assume a burger wrapped in lettuce would be gf, but this is not indicated on the menu or nutrition chart (and I didn’t ask). Every burger is marked as containing gluten due to, presumably, the buns. Hook does not offer a gf bun.

The nutrition chart indicates that a few of the salads are gf. I ordered the bistro salad with grilled chicken ($13). I told the cashier I have a gluten allergy and asked about their procedure for a safe gluten-free meal. She said the preparation would be safe. I asked for details, such as whether they would use a dedicated prep area, clean utensils, etc. She didn’t seem to understand what I was asking and said they are used to accommodating allergies. I went ahead and ordered. As far as I could tell, she didn’t inform the cook or take any special measures.

Luckily, the salad was great! It was depressing of course to watch my dining companions eat fries and burgers—ha!—but I did enjoy the bistro salad quite a bit. I had no problems afterward so I believe there was no cross-contamination.
