Had dinner here on a recent stay. They do have a menu clearly labeled with gluten free dishes including a salad, shrimp appetizer, a southwest style chicken and cheese dish, sirloin steak, and rib eye. Unfortunately for me I'm lactose intolerant and don't care for seafood which made things more complex. Was really looking forward to a steak, but for some odd reason they only serve them one day a week (Thursday) at the grill and it's not on the weekends. That left me in a bind, but the chef was very accommodating, and whipped up a burger patty (they are 100% beef) to combine with the southwest rice. While not a steak it was flavorful, and was safe to eat. Would eat here again, though wish they would consider having steak available more than 1 day a week.
Staff has a daughter with celiac and completely understands it. Everything has recently been labeled on their menu. A lot of great options.

This is a very casual restaurant within the resort. They have a few items marked on their regular menu as gluten free. However, they don't offer a gluten free pizza option or gluten free buns for their burgers. The staff did seem to understand how to prepare their menu items safely. We were very disappointed they didn't have some of the easy basics, but upon explaining our situation, we were told that we could bring anything we needed to make a meal gluten free: our own buns or chips for the salsa, guacamole, or queso. This is the only sit down restaurant at this resort and while it's not impossible to eat safely, they could have made it much easier with very little sacrifice on their end.
