They do have Gluten free soy sauce which you can request. Any of the temporary battered rolls would be off limits of course and those seem to be made in the kitchen. Otherwise it is in the open and you can watch them make the sushi. I always order 3 mango rolls, 2 seared salmon nigiri, and 1 salmon roll.
