I've been eating here for about a year. The waitstaff is knowledgeable about gluten, and I ask them to note the gluten intolerance on the order ticket. All of the sauces and seasonings here are now gluten-free. I will continue to eat here with minimal concern about cross-contamination.
We were there a few days ago, and I asked about the tortilla chips. The waitstaff said the chips are all fried in the morning, and the oil is changed daily, so there would not be cross-contamination. The same fryer is used to deep fry chimichangas and such, but later in the day. I ate three chips and did not get sick. However, I would be hesitant to believe they change the oil daily, as most restaurants do not.
