When a GF pizza is ordered, they wash hands, put on fresh gloves and take all ingredients from fridge instead of their assembly line. Then they cook the pizza in a dedicated oven.
I have celiac... But don't have a sensitivity... So I can't tell when I've consumed gluten until a week or two later.
They did earn that there's gluten in the air so they can't guarantee surfaces are GF.
Thry had 15-20 types of pizza that had GF options. (Any of those could be made GF). Today, tried the Reuben GF pizza... It was amazing. Haven't had a Reuben in four years.
Highly recommend. Will be coming back next time we visit town.
