One time they were very careful about using a different machine that was clean to slice everything and put the bread on something else that was clean. Another time I really had to stay on top of them (ex: they didn't change gloves until I told them and they were going to put mayo on it from the same mayo knife they spread on all the others. It makes the spreadable toppings not a good idea.). The bread is Udi's brand and it's a good sandwich, but you may need to watch every step. I think when the owner/manager was there, it went well because he was instructing the person on what to do.
