They use Udi’s GF rolls which hold up best with either a cheesesteak or a cold hoagie done “Mike’s Way” with oil and vinegar.
The staff here were very careful with the GF order and made a point to prepare it separately and avoid cross-contamination on things like the mayo spreader. It was a solid choice to avoid non-GF conference fare at a nearby hotel.
