The waitress was very friendly and even showed us a company email on what was good to eat gluten free. They were aware of cross contamination and they cook meat, eggs, potatoes and pancakes on separate cook tops. So as long as you order the items they suggest for celiacs the chance of cross contamination is slim to none. We also asked them to change gloves and they were happy to do so. I have had no reaction to any of the food I ate. I had the meat lovers omelet a side of fresh fruit and a side of bacon.
