I worked with an event coordinator and wait staff who appeared very knowledgeable about preventing gluten cross-contamination, yet I still would up with a pounding headache and extreme nausea (among other symptoms...) shortly after my meal. They had good intentions, but I wouldn't dare risk it again.
Very knowledgeable on celiac, cross contamination and gluten in general. The waiter took me through the regular menu and let me know they understand cross contamination and then asked me what I would like, he then modified the menu accordingly. Great experience!
