I have been a customer of Kaide for around two decades, since well before I was diagnosed with Celiac disease. They offer a gluten-free marinated tuna don that is simply delicious and one of the items I was most sad about not being able to have anymore since changing to a GF diet. It is not quite as good as the regular version of the dish with normal (gluten) soy sauce but it is VERY close and I still love it.
The Sunomono salad is naturally gluten-free since the noodles are made from yam. Their tomago (egg) is also GF and is the best tomago I have ever had and I've eaten it in Japan. The chef at Kaide is Tom and his wife, Hisako, is Japanese and makes the tomago for the restaurant. It's amazing!
Kaide also has a delicious vegetarian menu.
While not everything at Kaide is gluten-free, there are certainly enough options available for any Celiac to enjoy delicious sushi. Just let them know that you require gluten-free free options and they'll confirm with you what is and isn't going to work for you.
