I was a bit disappointed by the place after the glowing reviews. I did not get sick; it’s not a celiac thing. I came for the pizza and really wanted to love it. It looks super good, and the toppings were tasty/of good quality. But the crust, while pretty, could have been so much better with simple changes. It was unsalted, and the blandness threw the whole pizza off balance. I asked and they said this was intentional. Second, it wasn’t baked long enough— the underside had only a few small dark spots, the crust tasted slightly underbaked, and the texture was spongy with no chew— while the signature pizza chew wouldn’t be possible without gluten, baking a little longer would help. Underbaking may be a simple mistake, but unsalted dough by choice? Took this pizza from delicious to leave the crust on the plate.
I did also have a side salad, which was good.
