I am a very sensitive Celiac and eat at Lalo's in the airport every time I fly, many times a year. I have never been sick eating there chicken flautas and rice, no beans, no cheese. I don't know if other things are safe but these are great and I can confidently say safe.

In the airport location the best option is salad. All tortillas are heated on same grill as wheat tortillas.

Like most Mexican restaurants there are gluten free options. Enchiladas suizas are made with corn tortillas. Unfortunately, the staff are trained to tell you everything is cross-contaminated. They have limited cooking space and all foods are cooked in the same space. They cannot accommodate.
