You are at the mercy of the owner chef. If they are quiet they usually will put the effort into making certain items gluten free. We went after 9 to avoid the dinner rush and they declined to prepare pan fried wings which they almost always do since they do not have a dedicated fryer. Interestingly, he was behind the bar talking to the bartender while looking right at us, he must have told her he would not modify ahead of time, because she practically cut us off while ordering for our allergy, saying it was too busy (when the parking lot was half empty and there were many open tables). In the past, the waitress would always go back to the kitchen to see if they could do it but not this time. The owner used to be friendly but now it seems the making items gluten free is a bother.
