The first time I went they didn’t have a gluten free alfredo sauce, so the waiter asked the chef to make a safe alfredo sauce from scratch. They were very understanding of the fact it wasn’t just a preference and inferred some stuff when I told them I was celiac (when I requested GF pasta and told them it was medical, they presumed no croutons and told me they would make sure it was cooked separately without me asking).
