Lou Malnati’s Geneva was very accommodating for preparing food GF celiac friendly.
I called and asked them how they prepared their GF pizza. Talked the the manager and she told me their GF pizza dough is made in a different factory and comes prepackaged. I asked about possible cross contamination with normal pizza flour and toppings. The manager said they would make sure the cooking staff washed their hands, change gloves, and pulled out toppings from the cooler that had not been handled yet.
While they could not guarantee GF, they said they do cook the GF pizza on a separate pan in the same oven as the other pizzas.
I got the GF deep dish (The Lou) delivered (with other pizzas in the order too). It was very tasty and I did not get sick. I had a great experience!
