While the menu was NOT extensive for what could be made GF, I had the chicken ramen (they gave me some great GF grilled chicken - NOT fried and rice noodles), and I really REALLY enjoyed this. I am a total foodie (which is a huge drawback with a recent celiac diagnosis) and even though I couldn't have everything, what I had was really good. 18 hours later and no reaction, so I am sold :). I'd go there again whenever my family wants ramen!

The young lady told me my celiac options

They said:
We have a separate water for rice noodles and have a ton of celiac guests that dine with us regularly. Just let us know and we can make you feel safe.
UPDATE:
MY ramen tested positive for gluten so couldn’t eat it.

They only have 2 suggested ramen bowls that can be made GF however.. with some prompting I found out that they can custom make a “kids bowl” which is the same size as adult with lots of off menu items including proteins. Had a wonderful meal!
