4 stars for the food and 3 stars for GF knowledge. They have GF soy sauce and take the time to make the dish appropriately.
3 stars for their knowledge beyond the switching of soy sauce, take the time to be explicit. They are by no means experts, so be patient and thorough to define the dishes you want. (Don’t believe they can do General Tso’s GF, given their flour is the same).
Hot & Sour soup is uncommonly available, carpe form.
My wife has celiac. We ordered lo mein and stressed that it had to be gluten free and that the noodles could not be wheat. They assured us that it was gluten free. After bringing it home and eating some we both agreed that the noodles seemed to be wheat. When we called them they admitted that they had used wheat noodles. If you are looking for GF, I would avoid this restaurant.

They can modify many dishes to be gluten free. Including general tsos chicken (yes it is fried) and hot and sour soup.
