Ollie’s and Over the Edge (bar side) have gluten free buns available and some of the best gluten free pizza I’ve had. No dedicated fryer so the fries and house chips will be cross contaminated unfortunately. They are very accommodating and even asked me to try a barbecue sauce they concocted just for me when I mentioned I was gluten free. Also their salads do not come with croutons by default so little worry of contamination with those as well. Still not celiac safe though
