Parker's Barbecue Restaurant

Parker's is a well known very small chain of NC BBQ restaurants with a few locations in Greenville and one in Goldsboro. They serve Eastern style NC BBQ, i.e. with vinegar and chopped. Locals love it, outsiders might be surprised. They serve BBQ with a slice of Bible. Our very young waiter clearly had no clue what celiac was when I asked him to put the hush puppies on my wife's plate. He did, but he also promptly served my fried chicken instead of BBQ chicken, which might be because I ordered somewhat ambiguously. He did fix the error quickly. Anyway, so safety precautions here, but it's BBQ so there's not many gluten involved other than in the items with dough. No worries about gluten in the BBQ sauce here since it's vinegar based. The BBQ is good, BTW.
