I was impressed by how knowledgeable the person was who took my order. She said the rice noodles, broths, and meat are GF, and then they can steam the tofu to prevent cc in the dryer. The spring rolls are not Gluten free though. They have a little fried noodle in them. The person at the register had told me that they could make a GF option, but the message did not make it to the kitchen! So I did not eat the spring rolls. I ordered the pho with spicy lemongrass broth and brisket. Pretty tasty broth but salty and low in veggies.
