We have visited Pho V numerous times with our celiac who also reacts to corn, and we have never had a reaction.
The waitstaff confirmed with the kitchen that the pho is made with rice noodles and is naturally gluten free, as is the sushi. Additionally they offer boba tea made with cane sugar sweetened syrups which is GF.
Although the menu does not list which are and aren't gluten free, the waitstaff and kitchen have always been accommodating in answering questions, and it turns out that many items are. We still avoid fried foods and breaded items, so I cannot comment on whether there is a dedicated fryer or not.
