I've eaten here many times and have never gotten sick. I really like the GF dough and fresh unlimited toppings. It's a delicious pizza! Staff is super nice.

I want to explain the process so anyone else with celiac or gluten intolerance understands and can make their own decision too try. I've often felt uncomfortable, stressed out she in asking questions to staff/servers as I'm newly diagnosed celiac.

When ordering at Pi Co the staff will ask if you have had a gf pizza from them before or how severe is your gluten intolerance. This is so they understand and to earn you there may be cross contamination that they cant avoid. Both types of pizzas are cooked in the same oven. Their process is to wipe the wheat flour counter with a new rag, put on a fresh pair of gloves and place the gf pizza dough on rice flour and beats it down to a flat circle. Then the dough is placed on a wood pizza board (this may have had a what flour on it, not sure) and you chose your toppings. Some other locations have the wheat flour and rice flour next to eachother on the counter.
