Pie•o•neer offers 2 gluten free pizza crust options (cauliflower and rice) with a GF toppings area. It is much like a Subway or Chipotle, but for pizza. I asked for a gluten free pizza and opted for the cauliflower crust option (the kind lady putting my pizza together said that it has more flavor than the rice crust). She asked if I wanted the GF crust as a preference or an allergy. I told her allergy. She then changed her gloves in front of me, went to the back to take out a crust stored in a separate area than the gluten containing crust, and put my crust on tinfoil to avoid cross contamination on the metal plate/oven. All of the pizza sauces except the pesto are GF and you can mix the sauces too! I had the garlic sauce which was very good. She pulled out the tub of it from the back and used a clean spoon to put it on my pizza! Then we went to the end of the toppings bar where there was a mini section of gluten free toppings that have designated utensils that never touch a wheat crust. That includes pepperoni, sausage, olives, onions, peppers, mushrooms, and mozzarella. It’s a smaller selection, but she also asked if there was any other toppings in the normal section that I would like, and she would get fresh for me from the back! They seemed very knowledgeable and followed very safe procedures. The pizza was also really good. Highly recommend!
