The digital tablet menus do individually list which dishes are gf. My waiter was also able to guide me to dishes that could be modified (the fried rice could be made with tamari, the burger could come in a lettuce wrap, etc.) and knew to mention that the fryer was *not* dedicated. He offered substitutions to the fries for example.
I had the steak. It's what I would expect from a high end hotel restaurant: basic but flawless. Can't beat the scenery if you like planes.
