Ruse has a separate gluten free menu and our server was incredibly knowledgeable about gluten and celiac. There is a shared fryer but the oil is changed daily and the chips are made in fresh oil at the beginning of the day. We had a strawberry and burrata dish, an asparagus dish, the pork shoulder, and a labneh soft serve ice cream. Everything was delicious, fresh, and as a celiac I felt very safe eating at Ruse.
