You order and pick up your food at all different counters and then pay at the checkout and then seat yourself. It's a bit of a maze that way. I just had coffee and a dessert square. The coffee was good. The Desert counter had 5-8 gluten-free options. Most were pre-wrapped e.g. Sweets of the Earth brand but 2 water open stock. I chose the open stock Queen Elizabeth bar and highly recommend it. The staff member put on fresh gloves when she handled my order (my family had glutenous orders) and I packaged it seperately. I am confident that they did not cause any cross-contamition. However, the open stock treats are in the same ate baked in the same kitchen as the other items. Luckily this is rarely an issue for me. My square was scumptious, reasonably priced, and I had no reaction at all. My family said their non gf items were delicious also.
