This is basically a fancy subway like salad bar. They are “certified gluten-free sensitive”. I’m not sure what this certification means exactly but they did seem to know what they were doing when it comes to cross contamination. If you tell them you have a gluten allergy they are instructed to get a new server with clean hands and clean gloves. They will walk you down the aisle and open all new salad components for you. All of their salad dressings are gluten-free and made a gluten-free facility in Houston. All of the salad components are chopped on separate cutting boards with clean knives. The bread and pita chips are made in a separate kitchen away from the salad

Dropped in right at lunch and informed them I was celiac. They used new gloves and picked goods from the original container versus the open bar. They were very respectful of my needs!

Most ingredients are GF to begin with except the obvious ones, and there is an allergen info document on their corporate website. The only pitfall is that the last staff member in the assembly line puts huge croutons on the salads of those who ask for them, so if you're not on the ball he'll start handling your salad with gloves contaminated by prior customers' croutons. Be advised.
