AVOID THE BURGERS AT EVERGREEN IN THE RESORT. They have wheat and barley for some ridiculous reason(save a buck). The staff is clueless about it except one lady who told me after I had eaten them before..
The rest of the resort has alright options i suppose. Food is mediocre and expensive. The breakfast at the buffet has bacon, eggs, lots of fruit. Mangino's is your best bet. No separate menu but the staff seems to understand more. Me and my daughter both have celiac, she gets extremely ill while i don't. Personally i don't feed her at the resort at all. Disney has been pretty good about safety for her though.

The Garden Gallery chefs come out every time I ask for them and they tell me what I can eat off their buffet that is gluten free. I have never had any reactions and I was nervous since it's a buffet but they keep every thing clean and separate so I did not have any issues my entire stay. I am very sensitive so this was a very helpful option for me on vacation.
