The owner has celiac and has made the entire menu gluten-free with the exception of some desserts. I'm very sensitive (I react to grain vinegars and alcohols) and have been fine at Shaman. It's so nice to be able to order everything on the dinner menu! I can share with dinner mates here! I've had the ceviche, grilled park rivs, flank steak, cochinitas pibil, pork ribs, short rib enchilada, pork belly tacos, and the flan.
The cuisine is really tasty with interesting taste and texture combinations with ingredients like jimaca and pickled onions. They have several different mole sauces as well. Delicious!
