I asked the server, who assured me the dini rice is not made with vinegar or broth containing gluten. They also have gluten free soy sauce. It’s been a few days, and I’m still feeling good.

I also appreciated the knowledge and professional attitude about gluten and contamination.

The restaurant itself is a nicely-decorated, mid-range sushi place. Nigiri and maki range, but sashimi is just farmed salmon and tuna - not the most environmentally friendly.
