UPDATE: UMBC Administration and Dining Services have 1. pledged a training session for the chefs and all catering workers, led by the campus dietitian, 2. pledged to assure knowledgable staff are on site at all times, 3. pledged to create three quality gluten free options, and 4. pledged to refund my organization the full cost of my meal. This response is very welcome. For the time being, I still caution anyone eating at this site to call ahead to confirm gluten free options are available and understood.

ORIGINAL POST 10/16/2016: This review is posted to serve as a warning to diners and an alert for food service at the University of Maryland Baltimore County to institute training. My professional organization arranged a dinner at this faculty/staff dining room (Skylight Room), and ordered a gluten free meal for me with a month's notice. Upon arriving and identifying myself as the gluten free diner, I was brought (for my $45) a "special" bowl containing two small pieces of cold dry chicken (which smelled badly), a few broccoli florets, and COUSCOUS underneath. This was my dinner. Neither of the two staff persons on duty could respond to the nature of the couscous, they were unable to reach anyone by phone who would know if this was standard wheat couscous. One kept remarking that my food indeed had "no sugar." I was shown the order from my organization, which indeed said "no gluten." Further, the nice looking buffet options for everyone else had signs that read over most dishes "no gluten ingredients." What exactly was I supposed to eat at this place? Utter chaos. I left without eating.In sum, the meal I was brought was inadequate in quality at any price even if it were gluten free. It was very expensive. And the staff, though friendly and concerned, were clueless as to what they were serving. There is nothing to like here.
