No real Celiac options here. The previous notes are incorrect. They brown wheat buns on the burger griddle — so every burger is off-limits. Only food options for Celiacs are a fake-meat veggie burger (NOT a black bean burger) and a taco salad if you want protein. There are a couple of other house salad options.

I had a mushroom Swiss burger with a gluten-free bun. It was fantastic. And the fries were fresh cut and golden brown and crispy. The atmosphere is cool. The Shelby logo in the window caught my eye. I will be back.

Im not sure what bread they use, but it is absolutely the best I’ve had at a restaurant. The burgers are cooked fresh. Also the first place that I have been asked if I wanted my bun grilled or in the package to prevent cross contamination. That was new! I grilled it, had no reactions!
