Spoke with owner who runs the restaurant. He has a gluten allergy. When I asked for a gluten free menu, he said everything on the menu is gluten free or can be made gluten free. He has a dedicated fryer for gluten free. Without my asking, he told his staff to change their gloves before making my food. I overheard him explaining to his new staff member about gluten and what precautions to take. Food tasted great and staff was very pleasant and friendly.
