Work surfaces are all cleaned before they make each pizza. They are very good about avoiding cross contamination at each stage of the process. The gluten free option is 10 inches, thin crust. Taste and quality matches the GF pizzas I had when visiting Rome. Will be coming again. If you are ordering in person, you can also pick up a treat the Delish Cafe next door.
